Bread is life. There is something about bread that gives you comfort but as they say, too much of everything is never a good thing and this also applies to bread. If there was a bread recipe that is lower in Carbohydrates then I am for it. Good news is, there is an answer to that and that is the Paleo Banana Bread.
I have come across a lot of Banana Bread recipes using coconut flour and over the few months, I have taken an ingredient out and put a new ingredient in. In other words, I have tweaked it to my liking. Below is my recipe for a Banana Bread recipe using coconut flour or as what they call Paleo Banana Bread.
3-4 very ripe bananas, mashed
1/2 cup coconut flour
1 tsp vanilla extract
1 tsp baking soda
1/4 cup Almond butter
1/4 cup honey
Mix dry and wet ingredient separately then combine and whisk together until the batter is smooth. Bake for 45 minutes in a 175C preheated oven. Serve warm and enjoy as this will be the most deliciously moist banana cake you will ever have in life.
